Undated photograph of Dr. Yang and a graduate student. The caption taped on the back of photo states: "RESEARCHERS -- Dr. S. P. Yang, chairman of the Department of Food and Nutrition at Texas Tech University and graduate student Carmen E. Castro check the amino acid content of triticale in the laboratory in the College of Home Economics. Their tests show that the quantity and quality of triticale protein is superior to that of wheat. Miss Castro is the daughter of Mr. and Mrs. R. N. Castro of 1437 Main Avenue, Port Arthur, Texas. (Tech Photo)"
